An emblem of the Irati fruitière, Le Saint Sauveur des Basques faithfully celebrates the great cheesemaking tradition of the Basque Country.

In summer, sheep graze freely in high-altitude pastures, feeding on fresh grasses and wildflowers.

This botanical richness gives rise to a naturally fruity milk, with subtle and delicate aromas. A seasonal, vibrant and expressive milk that is fully reflected in the finesse and complexity of sheep’s milk cheeses.

Made from pure sheep’s milk, it stands out for its soft paste and melt-in-the-mouth texture, offering remarkable creaminess.

Its flavour, initially mild and delicate, gradually develops greater character as it matures, gaining in typicity over time, like a signature that becomes more defined with age.

Beneath its felted rind, its character is shaped by a mixed ageing process, combining bloomy and washed rind techniques, creating a delicate balance between roundness and more expressive nuances.

Its excellence has been recognised with a Gold Medal at the Tolosako Gasna Feria.
