MIRABEAU EGGS WITH SHEEP’S CHEESE AND SPECULOOS

Inspired by refined French culinary tradition, the Mirabeau Eggs recipe is reinvented here with iconic products of the terroir. The Ossau-Iraty PDO sheep’s cheese, matured in the Basque Country, brings milky and slightly fruity notes, while speculoos, a Flemish biscuit renowned for its spiced aromas (cinnamon, nutmeg, clove), offers a crunchy and warming contrast. This original combination celebrates both Basque cheesemaking heritage and pastry indulgence, for a recipe that blends authenticity with creativity.

Preparation

1. Preheating the oven

  • Preheat the oven to 165 °C (gas mark 5).

  • Place a deep baking dish filled with about 2 cm of water on the rack to prepare a bain-marie.

2. Preparing the base

  • Crumble the speculoos biscuits.

  • In a mixing bowl, beat the eggs, add a pinch of salt, pepper, half of the crumbled speculoos, and a little nutmeg. Mix well.

3. Preparing the cheese

  • Remove the rind from the sheep’s cheese and grate it.

  • Heat the milk until boiling, remove from the heat, and add the grated cheese.

  • Stir with a spatula until fully melted.

4. Assembly

  • Pour the hot milk and cheese mixture over the beaten eggs while whisking.

  • Divide the mixture evenly into 4 ramekins.

5. Cooking

  • Place the ramekins in the hot bain-marie and bake for 5 minutes.

  • Sprinkle with the remaining speculoos and continue cooking for another 5 minutes. Serve piping hot.
