As an ambassador of Basque gastronomy, Maison Agour Etxea crafts exceptional hams in the heart of Southwest France. Produced and aged for 12 months at Maison Baillet, our Bayonne Ham PGI stands out for its drier texture, low fat content and delicately melting mouthfeel.
Bayonne Ham offers a fine balance between character and delicacy, making it ideal for lovers of more full-flavoured hams.
The Bayonne Ham Protected Geographical Indication, awarded in 1998, guarantees both origin and quality: pigs born and raised in Southwest France, traditionally salted with Salies-de-Béarn salt, followed by slow maturation that respects time and terroir.
A local standard of excellence that we have chosen to take even further, to offer you a superior-quality ham, awarded the Gold Medal at the 2019 Concours Général Agricole.
Finely sliced, this 12-month Bayonne Ham PGI is best enjoyed simply, on a slice of rustic country bread, to fully appreciate its aromas. It also finds its place on a Basque-style sharing board, paired with a Basque sheep’s milk cheese, a few guindillas and a glass of red wine from the Southwest.
In the kitchen, it enhances everyday recipes: ham rolls with fresh cheese, omelettes, gourmet salads, rustic sandwiches, or finely sliced over a pizza or focaccia.
