In operation since 2009, this "cutting-edge" cheese factory currently makes up 15% of Agour's production. It was designed to develop and preserve the territory. First objective: to place value on what the shepherds from the valley produce, to guarantee the sustainability of future generations. Second objective: to make the shop a model as far as environmental respect is concerned (recyclable materials, energy optimisation, blending in with the landscape, etc.). The nerve centre of the Irati ecological cheese factory is the R+D department, which tests new recipes to improve our selection, improve the quality, etc. The department designs the products of tomorrow. The cheese factory was also specially equipped for tours (individual and group). A tour corridor with panoramic windows into the production process winds throughout the entire shop, so you can follow the cheese production cycle. Videos in Basque and French set the pace for the tour.
